50/50 Bacon Beef Burger

By: Gaby Dalkin

Ingredients

1 lb. 50/50 bacon burger mix or 1/2 lb. lean ground beef and 1/2 lb. ground bacon
4 hamburger buns, toasted
4 slices pepper jack or cheddar cheese
assorted toppings (ketchup, mustard, relish, guacamole, onions, etc.)
kosher salt and pepper to taste

Instructions

1. Place the burger mix or beef and bacon into a large bowl and season with salt and pepper. Gently mix to combine, and form the meat into 4 equal patties about the size of your burger buns.
2. Heat the grill to medium heat. Grill the patties for 5-6 minutes on each side. The grill will get smoky from the high fat content; use a long metal spatula to flip the patties.
3. Place cheese slices on top of patties one minute before the burgers are done, and let melt.
4. Remove burgers from the grill, and serve with your desired toppings between two pieces of toasted buns.
