- Granite counters are excellent for pastry preparations as well as final presentation of a dish. The surface can withstand heat without marring.
- Efficient layout is a key feature of professional kitchens.
- Stainless steel counters and appliances are easily cleaned and take abuse well.
- Access to water near cooking surfaces keeps work to a minimum. Position sinks close to the cooking surface.
- Keep cooking equipment basic: a flat top (griddle), grill and convection oven are all that are used in Donna’s restaurant. The convection oven cooks more quickly and evenly, and seals in juices.
- Good kitchen design is based on an understanding of the volume, type and frequency of cooking to be done there. For those who entertain frequently or cook large family dinners, professional appliances are a good idea because of their durability and added features.
- Refrigeration should maintain constant temperature and keep flavors separated. Multiple refrigerator drawers (Donna’s restaurant has 12) is a good option.
- Knives must be kept sharp and properly stored.
- Pots should be kept in close proximity to the stove. Donna likes copper for its even transmission of heat and good look. It requires a lot of maintenance, though.
- Good ventilation is critical; noise level of the fan should be considered.
