Adding fruits and vegetables to clear glass containers brings another colorful--and inexpensive--dimension to flower arrangements.

When using citrus fruits in arrangements, be sure the pretty center of the fruit is visible by pressing the cut side against the glass.

Decorator and author Bridget Fonger shows how to create centerpieces with fruits, vegetables and flowers.
- Create a spring arrangement with a pink and purple color scheme. First fill a round clear glass bowl with new potatoes in the pink and dark-purple variety. Add a few stalks of asparagus, then arrange tulips, daffodils or any other spring flowers among the stalks. Fill the bowl with water, which brings the colors to life and magnifies whatever is in the vase. Be sure to change the water daily.
Put together a summer arrangement by filling a tall glass cylinder with fresh green beans and small orange and/or yellow peppers (see photo at right). Fill with water, then add colorful flowers like Gerbera daisies. Again, change the water daily. If you want to eat the veggies in the vase, you must do it that day. Otherwise, they won't be any good. Baby artichokes, cranberries, limes, kiwis, berries, sugar-snap peas, whole peas, potatoes and nearly every other type of vegetable looks beautiful in the vase water.
